Easy Weeknight Thai Coconut Curry

Sauté 4 sliced chicken breast until no longer pink (but not browned).

Add veggies (I’ve used mushrooms, peppers, spinach etc in past, tonight was all baby broccoli).

Add 1 bottle Trader Joes Thai Red Curry sauce, 1/2 can light coconut milk, and simmer 10 min.

If you want it spicier, crush and seed a couple red thai chilies and add to simmer.

Serve with rice.
